日本には数々のヨーロッパ映画が昔も今も紹介され、戦時下における庶民の、悲惨な日々の生活での隣人とのささやかな交流の物語 ”禁じられた遊び” なぞがその美しいサウンドトラックと共にポピラーになったものです。

ロストフ ナ ダヌーに引っ越したある日、同居人の若い娘達から風呂屋に行こうと誘われて、この枝の束をあてがわれました。

ここはごく庶民的な風呂屋さんで、日本の田舎町の市庁舎みたいに味気ない、大きな建物でした。
中に入ると、やはり ”ガラーン” とだだっ広く、三々五々裸の女性たちが夫々の場所でうろついていました。
夫々の場所とは、だだっ広い体育館の様な天井から湯が落ちてきてる場所とか、すなわちシャワーです。
それからスチームバス、何の飾りも無いスチームの部屋でゆっくりしている人たち、十分くつろぐとまた冷たい水とか、温かいシャーワーを浴びて、と繰り返していました。
それで、束ねた枝を何に使うかと言えば、これは白樺の枝だそうです。
これで熱した体を ”ばしばし” たたくのです。

ボルシチはおいしいですよ。
これだけは確りと覚えてきて、料理しています。
ボルシチとは知る人はたくさんいるとおもいますけれどテーブルビート、をもとにしたウクライナの伝統的な料理で、鮮やかな深紅色をした煮込みスープです。
夏は冷やして供するそうです。
発祥はウクライナで、ロシアは勿論周辺諸国に普及したそうです。
現在、東欧諸国のほかに、中央ヨーロッパ、ギリシャ、イラン、北米でも在住の東欧系ユダヤ人によって作られており、世界３代スープの一つとして好まれているそうですね。

ロフトフ ナ ダヌーの若者達は大きなビートを丸ごと茹でてその後更に、おろし機でおろしていたので、一日中かかりました。

その他の野菜は、おろしきで細かくしていましたので、好き嫌いをして愚図る子供には形が見えないし、救い上げて捨てることも出来ないし、親たちの叡智だといつも感心していました。
私も娘も帰国してからも、ロストフ ナ ダヌー方式で、時間をかけてビートを丸ごと茹でていましたけれど、そうする必要がないと最近発見して、おろしきでビートを千切りにして、玉ねぎや人参と炒めるだけにしています。
丸茹でしたのも、しないのも味がそれほど異なると感じませんけれど、多分すごく違うのでしょうね。
スープの中身は決まっているわけではないので、野菜も肉も好みに応じて使いじっくりと煮込んで作ります。
いずれもスメタナを混ぜて食べることと、主材料にテーブルビートを使用している点は共通しています。
このボルシチに欠かせないのがスメタナです。
スメタナって何？
これはロ
シア風のサワークリームのことです。このスメタナは乳脂肪分の高いクリーム（日本で言う生クリーム）を乳酸きんで発酵させたものを言います。

私からみれば、ロシアもウクライナも同じスラブ民族で、キエフルーシーで同じ民族であると思うのですけれど、彼女はこれもあれも違うと断言していました。

ロシア語とウクライナ語はほとんど同じ様に思えますけれど、彼女の言うにはウクライナ人はロシア語がわかるけれど、ロシア人にはウクライナ語は解らないと言っていました。長いこと占領されていましたからね。
ソヴィエトが崩壊して後、二つの国に分かれて以後、特に言語はそのようになったようです。
要するに簡単な話は、ウクライナ人の彼女にとって、ロシア人と同じに扱われるのはとても嫌な様子でした。
何かにつけ意地悪されていますものね。
そうですよね。
我ら、韓国人も中国人も日本人も、よその国から見れば同じような姿かたちに見えたとしても、本人たちは違いを強調しますから。
とにかく隣国同士は、共通点をさがして仲良くしようとするよりも違いを強調して、仲たがいの道を行きたがるものです。
