遥かなるロシア 夏のスープ オクローシカ окрошка

南ロシア、ロストフ　ナ　ダヌーの夏の暑さに、冷奴もないし、ソーメンもないし何を美味しく食べられるだろうかと心配していると、大学生たちが、「冷たいスープよ」　と紹介してくれたスープの珍しくも美味しかったこと。

これを "オクローシカ" と呼ぶのだそうです。

伝統的な夏のスープなのだそうです。

日本にもアメリカにも特別に夏の冷たいスープがないので、「冷たいスープ？」なんていってしまいましたけれど、このスープを美味にしているのも、ロシアの伝統的な夏の飲み物　”クワス”　が重要な働きをしています。

そしてロシアの食卓には欠かせない　”スメタナ”　があって、夏の野菜たち、キュウリや春玉ねぎそしてゆで卵も浮かんでいておいしく食べることが出来ました。

”オクローシカ”　とは細かく刻むという意味だそうですけれど、ロシアの料理は何でも材料を細かく刻んでおりましたよ。

「食べやすいように、全ての材料を同じ大きさに刻むこと」ロシア料理を作るときは娘はそのように確認しています。

 It seems to call  "Okurosuka" this a soup of traditional in summer.
there is no cold soup in summer specially  the United States and Japan, What "cold soup?",  delicious this soup, using traditional summer drink "kvass" 
floating boiled eggs and spring onions and cucumber.
 "Okurosuka" mean cut small but not only this soup,  Russian dishes  were cut everything small.
My daughter, being careful that "as easy to eat, engraving in the same size all the materials" When you make the Russian cuisine.

遥かなるロシア ロシアの蜂蜜

モスクワからロストフダヌーに向かう途中、蜂蜜の名産地があります。

名産地といっても、ごく鄙びた駅で、 特別名の知れたメーカーであるかどうは知りませんけれど、駅名さえも覚えておりませんけれど、兎に角長距離列車の留まる駅では、駅弁売りのバブシカ（бабушка）いわゆるお婆さんを始めとして、叔父さんや叔母さん娘たちが、手作りのジャガイモの煮っ転がしとかピロシキとか売りに来ますけれど、この駅ではジャーに詰めたハニーを売りに来ましたそして、沿線にはミツバチボックスが転々と見えました。

この素朴で懐かしい駅で、大きなジャーを買い求めましたが、メーカーの名も個人名も記されていないジャーでした。

家族で一生懸命に働いて、集めた蜜なのでしょう。

ロシアは蜂蜜王国と言われるほど、沢山の種類があり味はこれが蜂蜜かと思うほどに濃厚で実に美味しいそうです。
”そうです。”　と言うのは私は蜂蜜人ではありませんので、余り頓着はないのです。

どこのリノックでも、大小様々沢山のジャーが素朴に並んで売られていました。

私にとっては、名も知らぬ田舎の素朴な駅で売る蜂蜜が最高でした。

ミツバチが減少しているという、ニュースが目に留まるたびに、あの素朴な村を思い出します。

Even  I say  production village, I do not know at the village name even the station name, but at the station to   long-distance train , people comes up for sale handmade as piroshki , boiled potato etc., but in this station came to sell Honey  jar  and I saw many  bees boxes in field along the railroad.
 Russia is called as  honey kingdom, many kinds of honeys to produce.
Say that. "Seems" I am not a honey person, is not care about too much.
Anywhere in Rinokku, we can see many kind of honey jars, large and small
For me, honey sell small village station in the country which is not known name was the best.
